Well being for body & soul, the cuisine at the Resort is both down‑to‑earth and cosmopolitan. We try to buy most of our food from local certified producers and we grow our own organic herbs and our Executive Chef Brendan Baxter carefully prepares delicious gourmet meals every day, using only the finest and freshest ingredients. His creations are a delight for every taste and dietary needs. Fresh, healthy and delicious! He has grown up in kitchens and has spent the last ten years working in Michelin kitchens around Europe before moving to Canada last year. He has a love for local, seasonal and organic produce which has a huge influence when planning our seasonal menu.

Dining in the Aurora Season – Family Style

Our evening dinners are part of the experience at Northern Lights Resort & SPA. All our guests at the Resort enjoy the meals together – coming together at the family table by the cosy fireplace. Wonderful evenings with long talks are often the foundation of new friendships. If not already included in your package, you have the option to book a seasonally inspired 3 course dinner for your stay. Please note: Dinner arrangements need to be pre-booked at least 48 hours in the Aurora season.

Wine, Beer & Cocktails

Northern Lights Resort & SPA is licensed and we offer a small but fine selection of Canadian Wines and Beer from our local brewery. Or try one of Kate’s Liquor and Cocktail creations before dinner.

Lunch

If you would like to use our lunch service, please let us know latest in the morning and we will prepare some fresh sandwiches and a delicious homemade soup for you or try Chef’s signature Chili bowls. And you can also order a packed lunch to go for your daytime activities and tours.

Breakfast

We serve a light and healthy European style continental breakfast with fruits, yoghurts, cereals, jams, cheese and cold meat variations, boiled eggs, fresh baked croissants and buns, juices, tea and our speciality coffee.
